Moving Back To The Country

I moved back Upstate after living in New York City for 16 years, it took longer to start the Organic Farm I was planning with both Family and personal Heath issues. I have been a Type 1 Diabetic for 33 years now and tend to look at food a little different than most. I was involved in the Diamond District for over half my life as well as running an Animal shelter so not only will I have posts with Recipes & Gardening information but also some tips on Family pets and just normal everyday Farm-Life.

Bacon & Pancake Dippers Recipe

Truth be told, this is more of a How-To. All you have to do is fry some Bacon and  place it in a strip shape pancake base than top it with a little more batter and fry. These make a Great Dish to serve for daily breakfast (I make extra & freeze them for quick to go meals) or for a weekend Brunch.
Quite often I use Bacon-Drippings to fry the Pancakes in for even more flavor. Dip these in Syrup, Jam or eat plain, trust me, make these once & it will become a must to every week. When you need a Quick Snack for yourself or the Kids.

Fluffy Pancake Recipe


3/4 cup milk
2 tablespoons white vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 tablespoons butter, melted
cooking spray or butter for fry pan
 
1. Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".
2. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and mix (pancake & muffin batter work best when lumpy, don't over mix).
3. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles break on the surface. Flip with a spatula, and cook until browned on the other side.
4. Top with Maple Syrup, Fresh Fruit or as picture Ice Cream.
5. The vinegar & milk combination creates a Butter Milk flavor, most people today have never had Butter-Milk but its a Great way to add flavor to an baked good.
